Cheese and spinach muffin recipe
CHEESE AND SPINACH SAVOURY MUFFINS
Switch up your morning routine with a batch of home-baked savoury muffins to start your day.
2 medium eggs
175g melted unsalted butter
200ml of a milk of your choice
1 tbsp. of natural yoghurt
1 tsp. of salt
270g self-raising flour
130g grated mature cheddar cheese
50g of baby spinach
A sprig of rosemary
Preheat oven to 190°C (170°C fan) mark 5. With an electric whisk, beat together eggs, milk, butter, yogurt, self-raising flour and salt.
Fold in the cheese and spinach, then spoon into 12 paper cases. Top each muffin with a leaf or two of rosemary before baking for 25-30 minutes.
Once golden, remove from oven and leave for 10 mins before devouring!
